Favorite Fresh Peach Cobbler

September wouldn’t be complete without fresh peach cobbler! Each year I make it a little bit different, trying out new flavors. This year’s peach cobbler is my favorite so far, so thought I would share it with you. It’s my version of this old-time favorite fruit dessert.

Fresh Peach Cobbler

Filling:

12-14 medium to large peaches
2/3 cup white sugar
1/2 cup brown sugar
1/4 cup cornstarch
3 tablespoons lemon juice

Topping:

1-½ cups biscuit mix
1 cube butter, softened
1 egg
1/2 cup milk or water
1/2 teaspoon vanilla

Preheat oven to 375º. Peel and slice peaches and place in large sauce pan. Stir in sugars, cornstarch and lemon juice. Over medium heat stir occasionally until thickened and bubbly. Turn heat to low while you mix up the topping.

For topping, put all ingredients in a medium bowl and beat with mixer just until well mixed, about 30 seconds. Pour peaches into a 9×13-inch baking pan. Drop topping in large spoon fulls  over the top of peaches. During baking the batter will spread to cover the peaches. Bake about 20 minutes, or until golden brown and topping is done all the way through.

Serve warm with vanilla ice cream, or whipped cream.
