Yummy Granola

I’ve experimented with granola recipes over the years and finally settled on this one as my (and my family’s) favorite. Its easy to make and full of good nutrition. It’s a great gift, given either in a wide-mouth quart jar or a purchased glass or plastic container.

Grandma B’s Granola

In large bowl mix together:
4 cups old fashioned rolled oats
2 cups rolled wheat flakes
1 cup wheat germ
1/2 cup flax seed
2/3 cup brown sugar, packed
1 cup chopped almonds

In small bowl mix together:
1/2 cup hot water
2/3  cup honey
1/2 cup canola oil
2 teaspoons vanilla

Preheat oven to 300º. Prepare 2 large cookie sheets with sides with foil or parchment. Pour honey mixture over oats mixture and stir to mix well. Spread half of mixture on each prepared cookie sheet spreading evenly. Bake 30 minutes. After removing from oven gently stir just a little. Cool then pour into large bowl and stir in:

1 cup flaked coconut
1 cup dried cranberries or raisins
1 cup other dried fruit, such as apricots or apples snipped into small pieces

Store in airtight container(s). Use as snack or breakfast cereal.

Oh, this looks really good and a lot simpler than the one I’ve been using. Can honey be sub. for the brown sugar?

Of course honey can be substituted. You may have to test out how much you want to use to get the taste you like. My family loves this granola and I often give a jar to my married grandchildren at Christmas.
